Chase Williams - Owner / Executive Chef
Originally from the Chicago suburbs, I have lived in Rockford for the last twelve years. After graduating culinary school, I worked at Terzo Piano in Chicago where I was able to hone in on skill and technique. I would go in 2 hours before my shift every day. I would get my tasks done quickly and it would force the experienced chefs to teach me new things. My favorite was always making the fresh pasta. You might recognize me from my years as the head chef of Social Urban Bar and Restaurant in downtown Rockford. I was the awkward one who came to your table and explained my dishes to you. I credit my time at Social for making me the chef I am today. More recently, I was the head chef for almost five years at Lark in Janesville, Wisconsin. The food at Plume will be a culmination of all my years as a chef and the influence of my wife Lia’s family traditions. My cooking philosophy can be best described as honest, rooted, and sustainable.
Lia Pennacchi - Owner / Drink Chef
Outside of a year living abroad in Italy, I grew up in the Rockford area and couldn’t be more excited to pursue this dream in my hometown. My father is an Italian immigrant and my heritage has always been very special to me. Being able to introduce Rockford to family traditions such as tigelle and gnocco fritto is an honor. The restaurant industry background runs deep for me. My late grandfather was a pastry chef and grandmother was a chef in Italy. I discovered my career and passion in all things bar and spirits related. The background of spirits was fascinating to me and I wanted to learn everything I could. I read countless books, enrolled in courses through the Wine and Spirits Education Trust, and spent time working at Artale Wine Company to deepen my knowledge and appreciation of liquor and wine. I had fun working the bar at Social Urban Bar and Restaurant and went on to run the beverage program at Lark in Janesville, Wisconsin, which consisted of ever changing original cocktails. My approach to drink creation is one of balance, quality, and creativity.
